Meatloaf Ingredients: (adjust according to how many you will be feeding ;)

1lb/ 1package Ground Turkey (adjust accordingly)

1 red bell pepper: diced

1 egg
-
1 cup Italian seasoned breadcrumbs

1/4 cup fresh parsley
-
1/2 cup grated parmesan cheese

1 small clove garlic diced
-
Salt and Pepper to taste

1-2 tablespoons Worcester Sauce (adjust to your liking)
For Roasting Pan:

Apprx. 1-2 Cups decent red wine (I used an organic red wine from a winery in Argentina but really any red will do!)

Two handfuls baby carrots

Two handfuls cut celery (cut to about same size as baby carrots)

Two handfuls baby potatoes (I use white and purple babies and they looked beautiful)

1 package brown gravy (to be doctored up with pan drippings and some extra red wine)
Steps:
1. In a bowl combine all ingredients for meatloaf with your hands
2. Form into a loaf (the longer the better, the denser you make it the longer it will take to cook)
3. Put the meatloaf in the roasting pan (sprinkle a little olive oil in the pan first if you want easier cleanup
4. Spread the carrots, celery, baby potatoes around the meatloaf and drizzle with a little olive oil, salt and pepper
5. pour about 1/2 a cup of the red wine into the veggies and a little over the meatloaf (enough to cover the bottom of the pan- just barely)
6. Bake in the oven at 400 degrees with foil on for 30 min
7. Remove foil and with a knife drag a very thin slit lengthwise along the top of the loaf, bake for another 30 min without foil
8. Cut into center before serving to make sure meat has cooked (should be whiteish/gray)
9. Prepare gravy according to directions as a starter but boost it by adding the remaining red wine (use in place of 1/2 the required amt of water) and any pan drippings
10. Cut meatloaf into slices (red bell pepper pieces and parsley chunks are visible and it looks pretty
11. serve with veggies and gravy
